RECIPES:

RATATOUILLE

Ratatouille is one of the few things in life you CAN actually have “your way.” Just add as much as you like of each vegetable to make the desired quantity.

Fry and drain 1 lb. pan sausage, or chopped link sausage, or whatever you have. For  vegan, omit the meat and just heat a little olive oil in a large frying pan. Saute one chopped onion and a small bell pepper. While this is cooking, peel and chop one or two eggplants, summer squash (zucchini and/or yellow), about 6 Roma tomatoes, and add them to the frying pan, along with sweet basil, thyme, black pepper, and garlic.  Add a little water mixed with Caldo de Pollo (omit for vegan) and cook on medium heat, stirring frequently, until veggies are tender. The veggies release so much water, so add minimal water for a stew, a little more water for soup consistency. Turn heat to low, cover skillet, and simmer until all is soft and well-blended. Salt to taste after completion.

Neal’s Berry Farm Blackberry Cobbler

Makes 1 cobbler about 5”x8”x2”
Filling:
1 lb. Blackberries, washed
2/3 cup Sugar
1 Tablespoon Tapioca Starch
2 Tablespoons Butter

Pie crust: use any recipe or pre-made

Topping: Spray Pam, 1 T Sugar mixed with 1 tsp Cinnamon.
Preheat oven to 350 degrees. Spray inside of pan with Pam. Place blackberries in a small bowl, add sugar and tapioca starch. Let it sit about 10 min.
Line the pan with your rolled crust, then add half the blackberry mixture. Dot with butter, add another layer of crust if you want, then add remaining blackberry mixture and a top crust. Spray top with Pam, then sprinkle it with the sugar-cinnamon mixture.
Bake approximately one hour or until center bubbles, but don’t burn the top.

U-pick blackberries are ripening quickly!

5/18/2026

This week's schedule: We PLAN to be open Fri, Sat. & Sun., May 22, 23, & 24, 2026 7:30am-1:00pm. Hopefully the rain forecast for mid-week won't be severe enough to keep us from opening this weekend, but PLEASE check back here before you drive out to be sure we are open. This pic shows a lot of red blackberries, and some of these will ripen and be ready to pick in a few days. See all the little brown calyxes on the plant? That's where a ripe blackberry was already picked last week. The farmer says all of the varieties of blackberries will be producing by this weekend. These sunrays are just what the berries need for ripening! We're just a few days away from peak blackberry season, so come on out this weekend before the summer heat sets in! We'll have lots of U-Pick flowers and pre-picked vegetables, too! 2026 opening date still to be determined

5/6/2026

Sorry, but we must delay our season opening date once again . . . Looks like rain Saturday morning, and blackberries and vegetables just aren’t ripening in time for an earlier opening. We will still be closed this weekend, but hope to open the following weekend, likely Saturday, May 16, 2026 (7:30am-1:00pm.) Pictures taken 5-6-26 show lots of under-ripe blackberries, but very few ripe ones. Please check back next week and we will have a better idea of our opening date. Thank you for your patience, and we PROMISE we are going to open soon! Neal's Berry Farm 21104 Binford Rd. Waller, TX  77484 @trosifarms
